the cherry corduroy

Tannins are naturally occurring compounds that serve as natural protectants for plants by warding off pests and preserving their integrity. In our diets, tannins offer antioxidant support, add flavor and can assist in nutrient absorption. This drink was inspired by the aging process of winemakers and the urge to recreate that same astringency that a crisp red wine offers. This drink shifts throughout the week as it rests. The first day it starts with a pop of cherry flavor and as the oak cubes marinate a day or two a subtle layered element arises - a smooth, refined sip. Perfect for an on-the-rocks kind of evening.

2 cups tart cherry juice

4 black tea (any kind) bags

2 quarts water

handful oak cubes - make sure you find food-safe wood safe for aging. I found them on Amazon

Steep in a jar or pitcher overnight then pull the tea bags out. Let the rest hang for up to 10 days.

MASH manifestation:

this one is delicate and a little resentful because big girls cry all the damn time. be gentle.

In a cocktail shaker or a mason jar smash:

1/2 cup raspberries

a few pink peppercorns

1 Tbsp rose water

1 Tbsp honey

Add:

1 tsp matcha

1/4 cup coconut water

1/4 cup milk of your choice

shake it up and strain it into a glass over ice.

coconut cold foam:

2 Tbsp chilled, canned coconut milk (mix of extra thick & less runny parts or just use the thick part & add a bit of the latte or milk)

splash rose water

~1 Tbsp honey

Shake it up in a jar or cocktail shaker until thick & creamy. Pour it over the matcha and dive in.

if matcha isn’t your vibe, just skip it & mix the raspberry smash into some cold brew or even just coconut water**

If Sinead had a drink it’d be something kind of like this. maybe. maybe not, but drink it anyway, it’s cool as a hot girl with a shaved head in 1997. Cold brewed green tea makes a gentler flavor, just isn’t as harsh in my opinion.

2-3 cucumbers, rinsed and chopped (any kind)

1 handful tarragon (mint is also an excellent choice)

4 jasmine tea bags

2 quarts cold water

steep overnight and enjoy. Serve over ice. Mix half and half with some soda water and add a lemon slice for a fun green tea soda that feels a little more festive.

cold brewing coffee

what’s the best ratio?

1:2 (100g coffee/200ml water) - super concentrated. great for cocktails, working as a baker at 2am & quick pick ups

1:4 (100g coffee/400ml water) - normal people amount

1:8 (100g water/800ml water) - you want to drink coffee past noon but not be up all night, you like the flavor but don’t need the jitters

For home brewing purposes I just eyeball about a 1 cup coffee per 4 cups water, since I’m lazy it turns out different every time, keeps me on my toes - the thrill of your upper thirties. Steep for 12-18 hours (longer it sits, stronger it gets) in the fridge. Strain with cheesecloth or through a fine mesh coffee filter. Dilute your drinks about 1:1 (totally personal preference, up to you on how litty you want to get) You can also make cold brew in a French Press coffee maker. If you’re grinding your own coffee doing a coarser grind will make straining it easier and some scientists (i don’t know who, I just made it up) think it makes it better…I think some girl I used to work with told me that actually, I didn’t question it, I just do it now.

1/2 cup cold brew

1/2 cup coconut water

pour over ice & if you’re bougee top it with:

coconut cold foam:

2 Tbsp canned coconut milk, chilled, full fat

dash maple syrup or honey (optional)

shake in a cocktail shaker, mason jar or froth with a hand frother until light and fluffy.
